Tokyo Twinkies

We made these great Spicy Japanese BBQ Garlic Ginger Beef Short Ribs with the intent of putting our own spin on the Texas Twinkie made popular by Hutchins BBQ in McKinney, TX. The Charcuterie Queen was actually just in the Dallas area and I sent her to Hutchins BBQ for dinner, and the Meat Church store in Waxahachie. Needless to say, we’re not worthy, but we sure are trying.

We got these short ribs at the grocery store in town and rubbed them with our Castle Road Black Garlic Blend, then marinaded in Bachan’s Hot & Spicy Japanese BBQ Sauce overnight in a vacuum pack.

  • Cream Cheese
  • Shredded Cheddar Cheese
  • Jalapeños
  • Scallions
  • Pickled Ginger
  • Powdered Ginger
  • Fresh-Ground Black Pepper
  • Parsley
  • Sesame Seeds
  • Castle Road Black Garlic Blend
  • Bachan’s Hot & Spicy Japanese BBQ Sauce
  • Trader Joe’s Sriracha

We’re not listing any quantities because you’re just going to have to follow your heart and eyeball this one.

The next day we took our short ribs out of the marinade and dusted with ginger and our Castle Road Black Garlic Blend. We cooked the short ribs low and slow on an 18″ kamado-style grill at about 225-250 for about five hours over some Sugar Maple Lump Charcoal from Basques and hickory chunks for a little smoke flavor.

Once we had a nice bark going, we started basting with Bachan’s Hot & Spicy Japanese BBQ Sauce.

We bumped up the heat to 275 for about the last hour of the cook until we hit an internal temp of 200 degrees, and it was probe tender.

The next day we chopped the leftover short ribs, scallions, pickled ginger, and jalapeno and added that to some shredded sharp cheddar and cream cheese.

Filled our jalapeños, wrapped them in bacon, dusted with more ginger, fresh ground black pepper, and cooked over the same lump charcoal and wood chunks at about 300 for a couple hours until crispy, then basted with a mix of Bachan’s Hot & Spicy Japanese BBQ Sauce and Trader Joe’s Sriracha. The key here is to not overfill the jalapeños. The filling will expand as it cooks!

Topped with sesame seeds and chopped scallions. These things are the real deal. Give them a try, and let us know what you think!
